We topped our classic summer dish, ratatouille, on focaccia dough, then added mozzarella and parmesan and baked it.

A croissant filled with yogurt cream and mango, finished with a jelly flavored with passion fruit for a refreshing taste. It's delicious even when chilled.

    【Career】
    Born in Hakodate, Hokkaido in 1967.After working at Yamazaki Baking Co., Ltd., he honed his skills at the Akasaka Prince Hotel.In 1992, she won the Silver Prize for Large-Scale Confectionery Art at the Japan Cake Show.He also has experience as an instructor at Oda Confectionery College, and was appointed head pastry chef of this hotel in 2005.In 2011, he was promoted to "Disciple" of the Escoffier Society, one of the highest honors in the French culinary world.
